Behind a flag and enable Monday is the same thing with extra steps and one more state to test.

The flag only pays for itself if you were going to test both states anyway. Otherwise you shipped two code paths to avoid shipping one.

We do not deploy on Fridays, and the honest reason is that our build takes 40 minutes, not that we distrust the code.

'Deploy, but never alone' is the only one of these that survives contact with an actual incident.
